Great Post!

A well engineered menu does work like magic and a poorly engineered menu works like a disease slowly robbing the life out of your restaurant.

In my business I get to go into a lot of restaurants that have recently gone out of business. In virtually every one I search out the last menu before the closing and virtually every one has a poorly engineered menu.

In a great many instances I also get access to POS data. In almost every one I visit I can generally find the item(s) that contributed to the downfall of the business. Hint: $5 Burgers and All-u-can-eat wings generally top the list.
